One thing I’m trying to stop doing is spending so much money on protein bars or on the go bars. Since they’re sometimes almost 3 dollars a bar, they just don’t fit into my weekly budget.
I am going to be doing a lot of experimenting with different protein bar, granola bar, and muffin recipes soon to see what works best for me.
I started out this project with these.
Honestly, they are pretty much identical to banana bread.
I am definitely going to be making them again.
They’re also extremely easy to make!
1. 1 cup old fashioned oats
2. 1 cup oat flour (blend another cup of oats)
3. 1/3 cup protein powder
4. 2 mashed ripe bananas
5. 1 1/2 tbsp honey
6. 2 tbsp almond butter (or any other nut butter)
7. 1/4 tsp salt
8. 1/2 tsp vanilla extract
9. 3 egg whites
10. 1/2 cup almond milk (or any other milk of your choice)
11. 1/2 tsp cinnamon
12. 1/4 cup chocolate chips
Set your oven to 350F.
Start off by blending together your oats, oat flour and protein powder. I just did this in my vitamix
In a separate bowl, add your other ingredients
Mash together
Then, add those to your vitamix, and blend so the mixture is relatively smooth
Pour into a prepared muffin pan, muffin top pan, cake pan, or whatever other type of pan you’d like to use.
Add your chocolate chips (smiles are optional )
Bake for 10 minutes or until done.
I don’t know about you, but I have a very difficult time not feeling happy when looking at these.
After all, healthy food is happy food!
