Since it is the season to be jolly, it seems more than natural to make a lot of cookies…. and I mean it. A LOT of cookies.
I’m going to be posting all of the cookie recipes I make this year into a Christmas Cookie section. All the recipes will be titled as so :). Be sure to follow to be notified when I post them (sidebar) or like my Facebook, follow me on Twitter, Pinterest, and Instagram.
One recipe that my Aunt Patti makes every single year is this recipe for Toffee Bark. Christmas wouldn’t be the same without these cookies. I guarantee once you try, you’ll feel the same.
It’s so easy to make and the result is amazing.
My mom made this particular batch, and I meant to shadow her so I could take pictures, but alas I forgot.
I did step in for the end to get some pretty cool shots though :).

And this is once it was cooled. Or at least cool enough to break apart. Like I said, these are addictive. It’s not exactly easy to wait for them to be 100% cool

This recipe was adapted from Tracy's recipe on AllRecipes. It's the perfect recipe for the holidays. Easy to make, and definitely addictive!
Ingredients
- 1 package of Club crackers (enough to line bottom of pan)
- 1 cup butter
- 1 cup dark brown sugar
- 2 cups semisweet chocolate chips
- 3/4 cups pecans
Instructions
- Preheat oven to 400F
- Line cookie sheet with foil.
- Place crackers on top. Make sure the crackers are all touching
- Combine sugar and butter in a saucepan.
- Bring to a boil, and allow to boil for exactly 3 minutes
- Stir every once in awhile
- Pour mixture very quickly over crackers. Make sure it covers. This needs to be done fast otherwise it'll harden.
- Bake 5 to 6 minutes
- Spread chocolate chips on top and allow to sit so chocolate melts.
- Spred chocolate and press pecans into the chocolate. (I only put it over half)
- Allow to cool completely and then break into desired sizes.
